NuCook Live Remote Cooking Class
We are so excited to cook with you next week and to talk about the impact of food on health and menopause! Our class will focus on Heart Health and we will make Morrocan Chicken Meatballs with Cauliflower Couscous, and Moroccan Carrot Salad.
To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:
Ensure that you have all of the ingredients listed for the recipe
Ensure that you have all the equipment needed on the equipment list
Measure and prepare your ingredients in advance

Measuring spoons
Liquid measuring cup
Dry measuring cups
Food processor or Box grater
12-inch skillet w/lid
Garlic press (optional)
Box grater
Rasp grater
Juice reamer (optional)
2 large mixing bowls
Saucepan with lid
Wooden spoon or rubber spatula

Ingredients - List
Produce:
2 onions
6 cloves of garlic
1 small zucchini
Small bunch of parsley or cilantro
Small bunch of cilantro or mint
1 head cauliflower (approx 2 lbs.) or 1 bag frozen cauliflower (1.5 lb.)
1 shallot
1 orange
2 lemon
1 pound
Pantry:
Extra Virgin olive oil
Garam masala
Ground cinnamon
Ground cumin
Cayenne
Paprika
¾ cup quick oats
2 tbsp tomato paste
1 14-oz can diced tomatoes
3 cups low sodium chicken broth
¼ cup golden raisins
Kosher salt and freshly ground black pepper
Honey
Other:
1 large egg
1 pound ground turkey or chicken (at least 93% fat for best results)

For the Meatballs - have everything prepped and measured.
For the Cauliflower - prep cauliflower and shallots.
For Carrot salad - prep and measure all ingredients.
